Colorful Plate

Here’s my supper from Friday night.

Three kinds of lettuce (red leaf, green leaf, romaine), raspberries (I try to always add one fruit to the mix), slightly thawed peas, navy beans (I’m getting pretty good at cooking my own beans), slivers of mini carrots, a small amount of thinly sliced red onion, one half a roma tomato diced (I try to eat one whole tomato per day), and some balsamic vinegar sprinkled over the whole thing. Yummy. I love how colorful my salads are and how pretty they look on my Fiesta Ware plates.

The salad was the main course and then I had a small serving of Green Beans and Potatoes (minus the smoke flavoring). And I was full! Eating Vegan most of the time is turning out to be a lot easier than I ever thought it would. And Saturday morning, my scales told me I was down two more pounds! Whooeee! That makes a total of fourteen pounds weight loss so far in ten weeks. I am happy with that!
